Rum cake

items: 4 oz semi-sweet chocolate, broken into peices
5 tblsp unsalted butter
3 tblsp light or golden
rum
4 large eggs, separated
1/4 cup sugar
2 tblsp flour
1/4 tsp salt
Preheat oven to 350. in a metal bowl set over a sauce pan of simmering
water melt chocolate , butter and rum. stirring until mixture is smooth. remove bowl from heat. in another bowl mix
2 tblsp sugar, flour, egg yolks and salt until mixture is smooth. add chocolate and mix well. With a mixer beat eggwhites
until soft peeks form. blend in sugar until soft peeks form. stir half the whites into chocolate mixture. fold in the rest
of the whites gently but thoroughly. pour into a buttered 8 inch pan and let bake in oven for 40 to 45 minutes or until toothpick
inserted comes out clean. let cool and enjoy!
