Guinness stew
 
prep time: 25 min
cook time: 2 to 3 hours
items: 2 lbs lean stewing beef
         3 tblsp oil
         2 tblsp flour
         2 large onions, coarsley chopped
         1 large clove garlic, crushed
         1 1/4 cup guinness stout
         2 cup carrots
         2 tblsp tomato puree, dissolved in 4 tblsp water
         salt and pepper
 
Preheat oven to 300. cut meat into two inch cubes and toss in 1 tablespoon oil.   season flour with salt and toss in mixture.  heat remaining oil in pan over high heat. brown the meat. add garlic, onions and puree to pan. transfer contents of pan to a baking dish or pot. pour small amount of beer in pan and bring to a boil. now pour beer onto meat with remaining guinness. add carrots and a little more salt. cover with lid and simmer for 2 to 3 hours. you may cook stew on range or in the oven.
